In Thailand, crispy chili toppings with various herbs are a staple condiment that is commonly found on dining tables across the country. Known as “prik krob” in Thai, these toppings are made by frying small, whole chili peppers until they are crispy and crunchy, then seasoning them with a blend of salt, sugar, and herbs. Thai crispy chili toppings are typically made using bird’s eye chili peppers, which are known for their intense heat and fruity flavor. The most common herbs used in the seasoning blend include coriander, garlic, lemongrass and shallots, which give the toppings a fragrant and savory taste. Crispy chili toppings are used to add flavor and spice to a wide range of dishes, including soups, curries, stir-fries, and salads. They are also commonly served as a condiment alongside other dishes, such as grilled meats or noodle dishes. We use rice bran oil for our frying process and refrain from using palm oil whenever possible.
