Thai Boat Noodles, also known as “Kuay Teow Reua” are a type of noodle soup that originated in Bangkok’s floating markets, as they were originally sold by boat vendors who travelled along Bangkok’s canals. They are known for their rich and complex flavor, achieved through a mix of soy sauce, garlic, cinnamon, star anise, and other aromatic spices. They are simmered for hours to create a deep, flavourful base. Traditionally served in small bowls, the dish often comes with a variety of toppings such as fresh herbs and bean sprouts.
